Yellow Rice

We love white rice, but every once in a while we like to change things up by cooking up some easy Yellow Rice. Yellow rice makes our plates more colorful and goes great with some of our favorite saucy dishes.
What You'll Need
- 1 cup long- or whole-grain white rice
- 2 cups water
- 2 teaspoons olive oil
- 1 teaspoon onion powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground cumin
- 3/4 teaspoon salt
What to Do
- In a medium saucepan, combine all ingredients; bring to a boil over high heat, stirring constantly. Reduce heat to low, cover, and simmer 20 minutes.
- Remove from heat and let sit 5 minutes. Fluff rice and serve.
Notes
Traditionally, saffron is used to color and flavor Mexican rice, but we don't always have it on hand and, besides, it's really expensive. So we decided to replace it with turmeric, and, you know what? It tastes just as good!

Ok, I made this but substituted instant rice in bags (rice bags boiled in water, then drained out the water) then added the remaining ingredients, so it might have been a little drier, so I just added a little more water in the pan with the rest of the ingredients. I then tasted it, and thought it needed a little more ingredient, so I added some fresh chopped chives to it. Voila! A better taste came out from that and as you see in that picture, someone added a "green" to it, so I added my "green" to it! The Turmeric made the flavor and color, and the onion added more flavor, so I suppose a little less onion added in than 1 teaspoon...try anywhere from half to 3/4 teaspoon of the onion powder. Other than that, it's an nice flavored rice recipe.

This is an all star favorite at our house. Wonderful served with crisply fried or baked chicken. Love it.
