Simple Homemade Pickles

Turn those extra cukes sitting in your fridge veggie bin into some fresh-tasting crispy and crunchy homemade pickles. Our Test Kitchen's foolproof Simple Homemade Pickle recipe is as close to what you'd find in an old-fashioned pickle barrel.
What You'll Need
- 7 cups sliced cucumbers (about 5 medium cucumbers)
- 1 cup sliced onion
- 1 green bell pepper, finely sliced
- 1 cup sugar
- 1 cup white vinegar
- 1 tablespoon salt
- 1 teaspoon celery seed
What to Do
- In a large bowl, combine cucumbers, onion, and green pepper . Add remaining ingredients; mix well.
- Cover and refrigerate at least 24 hours before serving.
Notes
Pickles will keep about 3 months in the refrigerator. For a different touch, add EITHER a little garlic, dill, oregano, or hot pepper sauce.

The recipe says cook time 5 min but the directions do not indicate any cooking. I believe the sugar, vinegar, salt are to be boiled 5 min, add celery seed , then pour over veggies. Refrigerate for 24 hours before serving. I added a banana pepper instead of bell, red pepper flakes and mustard seed to each jar then filled with the soaked cukes and onions. Its very easy and tastes great.

Hi there! Thank you for bringing this to our attention. We have gone ahead and corrected the recipe. This recipe does not require any cooking time, since this is more of a marinated pickle recipe. The acid in the vinegar will soften the pickles.

This was good with out using the bell pepper. Would definitely make again and maybe even add some cauliflower to it.

I just tasted the first batch of this recipe, which I doubled to fill my tupperware pickle container. WOW! I sliced the pickling cucumber on the bias for oval shapes with a mandolin slicer and added about 10 cloves of garlic as suggested above and this is by far the best recipe for pickles I ever had. I also substituted Splenda for sugar and used a red bell pepper. Next batch I will add some crushed red pepper flakes for some extra heat. Great Recipe
