Tomato Vinaigrette

By cutting back on the oil and adding a few extra spices, you can whip up a vinaigrette dressing that you'll enjoy using again and again...without any guilt!

What You'll Need

  • 1 cup water
  • 3/4 cup red wine vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon sugar
  • 1 tablespoon dried Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt

What to Do

  1. Combine all ingredients in a blender and blend on high speed for 5 to 10 seconds, or until well blended. Store in refrigerator in an airtight container until ready to use.

Makes about 2 cups dressing.



You can use Tomato Vinaigrette as a dressing for tossed salads and pasta salads, and also as a vegetable marinade.
