A perfect, healthy go-along with any meal, one taste and we know you'll go nutty for Nutty Okra.
What You'll Need
- 1 cup biscuit baking mix
- 1/2 cup finely chopped dry-roasted, salted peanuts
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (16-ounce) package frozen cut okra, thawed
- Peanut oil
What to Do
- Stir together biscuit baking mix, chopped peanuts, salt, and pepper in a large bowl. Add okra, tossing to coat; gently press peanut mixture into okra.
- Pour oil to a depth of 2" into a Dutch oven or cast-iron skillet; heat to375 degrees. Fry okra, in batches, 4 minutes or until golden; drain on paper towels.
Use a food processor or manual food chopper to chop the peanuts - it does the job fast!
