This is a very good way to serve cauliflower. I used fresh cauliflower slightly cooked and it turned out fine. Husband commented twice while eating that this was good. Will be making this again and again.

Could cheddar cheese soup be used instead of cream of mushroom?

Hi there! While the Test Kitchen has not made this recipe substituting cheddar cheese soup, we do believe that it is an acceptable substitution. Since there is already 2 cups of cheese in this recipe, we recommend eliminating the 1 cup of cheese that is used in the mixture and just using the 1 cup for sprinkling on top. Enjoy!

Could fresh cauliflower be used in place of frozen? If so, will I need to precook?

Hey there- You can use fresh cauliflower that has been steamed or microwaved for 5 minutes.

Looks fantastic! I will try it for Thanksgiving dinner..thanks!

Sounds delicious..you think it would be good in a slow cooker..?

why dont you reveal the calories and carbs for your recipes
