Roasted Acorn Squash drizzled with sweet maple syrup is the perfect holiday side dish for both Thanksgiving and Christmas. With a savory yet sweet taste this classic holiday go-along is easy and delicious.

What You'll Need

  • 1/3 cup vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 acorn squash, tops cut off, cut in half, seeds removed, cut into 2-inch chunks
  • 1/4 cup maple syrup

What to Do

  1. Preheat oven to 400 degrees F.
     
  2. In a large bowl, combine oil, salt, and pepper; mix well. Add squash to oil mixture; toss to coat.
     
  3. Place on rimmed baking sheets and bake 50 to 60 minutes, or until tender. Drizzle with maple syrup and serve.

Acorn and Butternut squash are both sweet and fiberous. I bake mine in the oven or micro. I spray with butter or butter spray and sprinkle cinnamon and organic brown sugar (15 cal per t.) In fact this is the only sugar I use now. I use 1/4 t = 1 reg t sugar. I enjoy the squash all summer and fall. Just like pumpkin pie. : ) Fills your sweet tooth.

Even better-cut in half, take out seeds and fill with applesauce and raisins..bake at 350 til done..approx 45 min

Great idea! Another way to serve it is to leave the squash cut in half, add butter and syrup and bake the squash cut side up.
