Zucchini and Tomato Bake

Quality time?! All we hear from everybody today is, "There's no time!" But maybe, just maybe, if we had some old-fashioned-tasting comfort foods that were today, easy to make, we'd tempt that gang of ours to cut short all those extra activities- maybe even once a week. And then we could sit down at the table and enjoy a quality meal and quality time together.

What You'll Need

  • 3 zucchini, cut into ΒΌ-inch-thick slices
  • 1 (28-ounce) can diced tomatoes, drained
  • 1 onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

What to Do

  1. Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.
     
  2. In a large bowl, combine all ingredients except Parmesan cheese; mix well.
     
  3. Spoon into baking dish and sprinkle with Parmesan cheese. Bake 30 to 35 minutes, or until zucchini is tender. Serve immediately.
