Zucchini and Tomato Bake

Quality time?! All we hear from everybody today is, "There's no time!" But maybe, just maybe, if we had some old-fashioned-tasting comfort foods that were today, easy to make, we'd tempt that gang of ours to cut short all those extra activities- maybe even once a week. And then we could sit down at the table and enjoy a quality meal and quality time together.
What You'll Need
- 3 zucchini, cut into ΒΌ-inch-thick slices
- 1 (28-ounce) can diced tomatoes, drained
- 1 onion, thinly sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
What to Do

Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.

In a large bowl, combine all ingredients except Parmesan cheese; mix well.

Spoon into baking dish and sprinkle with Parmesan cheese. Bake 30 to 35 minutes, or until zucchini is tender. Serve immediately.
