After Work Pepper Steak is the kind of dish we all need after especially hectic workdays. It teams our meat and veggies and cooks up fast on the stovetop.

What You'll Need

  • 1/2 cup beef broth
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 2 tablespoons vegetable oil
  • 1 1/2 pound beef top or bottom round steak, cut into thin strips
  • 1 red bell pepper, cut into thin strips
  • 4 ounces fresh sliced mushrooms
  • 3 scallions, sliced
  • 1 clove garlic, minced

What to Do

  1. In a small bowl, combine broth, soy sauce, cornstarch, and ginger; mix well and set aside.
     
  2. In a large skillet over medium-high heat, heat oil; saute beef 2 to 3 minutes, or until browned. Add peppers, mushrooms, scallions, and garlic and cook 4 to 5 more minutes, or until vegetables are tender.
     
  3. Add broth mixture to skillet and cook 2 to 3 more minutes, or until sauce thickens. Serve immediately.
     

Note

  • Any color bell peppers will do the trick here. You might have a different color on hand every time you make this, so use whatever you've got!

Also I discovered my supermarket's meat department sells pre-cut streak in strips labeled beef for stir fry. What a time saver. If you can find this item at your store, buy it.

I made this recipe for dinner last evening and my partner really enjoyed it. He was looking for rolls because he said traditionally pepper steak is served over rolls, but we didn't have any. I had made white rice to serve it on a depicted in the photo. Also I doubled all the ingredients in the sauce to have extra gravy because we like gravy. Yummy!

Made this today for my wife and I. Used 1 cup beef broth so I could have more gravy. Turned out great. Will make again.

I use mushroom soup sauce. More rich flavor

What can I use instead of soy sauce? I am allergic to soy

Hello - We add soy for salt flavor and brown color in this recipe, so if you leave it out you can add some salt to add flavor. You could also try adding Hoisin sauce, which would give it an Asian flavor. Some people have found that "coconut aminos" (available in some supermarkets and specialty stores) is also a great substitute for soy sauce, and has a similar flavor.

I just made a Pepper Steak the day before discovering this recipe. It was so good and much like the recipe above, but I love lots of gravy or sauce so I added a can of mushroom soup and 1 serving of chopped broccoli. My son pleads "Mom, you've got to show me how to make this."

Yummy. I like lots of veggies with my Chinese food so I added broccoli, onion, baby corn, bamboo shoots, water chestnuts & red pepper flakes for a little zing. Even after adding all the extra ingredients, I still had plenty of sauce for my brown rice. Great base recipe to start with & adjust to your family's tastes.

Can't wait to try!
