Meat Loaf and Potato Casserole

Here's a great meat-and-potatoes combination that's sure to be a hit with your gang! There's no need to make a separate mashed potato side dish... you can have an all-in-one dinner with this reader-favorite casserole.
What You'll Need
- 1 pound lean ground beef
- 1/3 cup saltine cracker crumbs (about 8 crackers)
- 1 onion, finely chopped
- 1 egg, lightly beaten
- 1 tablespoon chili powder
- 3/4 teaspoon salt
- 4 servings warm instant mashed potatoes
- 1 (11 ounce) can whole kernel corn, drained
- 6 scallions, thinly sliced
- 1/2 cup shredded Cheddar cheese
What to Do
- Preheat oven to 375 degrees F. Coat an 8-inch square baking dish with cooking spray
- In a large bowl, combine ground beef, cracker crumbs, onion, egg, chili powder, and salt; mix well. Press mixture into prepared baking dish and bake 25 to 30 minutes, or until juices run clear. Drain off excess liquid.
- Combine potatoes, corn, and scallions. Spread over meat loaf. Sprinkle cheese evenly over top.
- Bake an additional 8 to 10 minutes, or until cheese has melted and top has begun to brown.
Notes
- If you want to add more spicy heat, use a little more chili powder or use a blend of shredded Mexican cheeses or Monterey Jack cheese with jalapeno peppers instead of Cheddar cheese.

Hi there! We have a wide variety of recipes and many don't contain cheese, but also, we try to make our recipes versatile so that you can adapt it the way you like, so for many, depending on the recipe, you may even be able to leave the cheese out. :)

While this is listed under "kid friendly" entrees, I made it for my 54 year old roommate (who still takes Flintstones vitamins!), and she LOVED it! A total Monday night winner in my house!

We also added some brown gravy to the top of this dish as well and it turned out great as well.

was awesome. added brown gravy on top instead of cheese. I mixed the cheese in with the potato's and corn.

P.S. Not a fan of Instant Potatoes....so I scheduled this dish when I knew i would have extra homemade mashed potatoes from the night before....

Awesome recipe...made according to recipe....VERY GOOD! The next time i doubled up the beef and used bread crumbs, garlic powder & Italian seasoning...baked it with a ketchup topping prior to loading the potatoes on top...wasnt sure how that would go over....Kids LOVED it ! I was impressed as well ! High marks on this one : )

This is really good, although I made my meatloaf like I usually do....I added onion, green pepper, celery and used fresh bread crumbs rather than crackers. I did everything else the same and it was delicious. Will make it again.

Go to spark people, put the ingredients you use into the recipe and then come back and post your own recipe with the stats. Or just don't come back, there are dozens of recipe sites online. Go for it.

JIMKC ..... AWWWWWWWWWWWWWW you poor baby We are so sorry to see you go.. Common sense is all we need we do not need nutritional information For instance we know this recipe is very nutritious, tasty, and filling.. all it needs is a side of green beans or salad but we also know simply by reading thru the recipe, it is not a skinless chicken breast and lettuce leaf and is probably a little high in calories SO, skip dessert!! Do not need any written info for that
