Holiday Quick Bread is one of those cake-textured breads that can be changed so easily to fit the bill for every season. One recipe, but all seasons.
What You'll Need
- 1 cup sugar
- 4 tablespoons vegetable oil
- 1 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
What to Do
- Preheat oven to 350 degrees F. Grease and flour a 9- x 5-inch loaf pan.
- In a large bowl, mix together sugar, oil, milk, egg, and vanilla; beat well. Add flour, baking powder, and salt. Pour batter into prepared loaf pan.
- Bake 50 to 60 minutes, or until a toothpick inserted in center of loaf comes out clean. Cool 10 minutes then remove from pan and let cool on wire rack; serve.
To make Cranberry Bread: Add 1 teaspoon orange extract, 1 teaspoon ground cinnamon, and 1-1/2 cups chopped cranberries to batter and bake as above.
To make Fresh Apple Bread: Use ingredients as above, except divide sugar, and mix together 3/4 cup sugar (of the 1 cup total), vegetable oil, milk, egg, and vanilla in a large bowl; beat well. Add flour, baking powder, and salt. Pour half the batter into the prepared loaf pan. Toss 2 cups cored, peeled, and chopped apples with the remaining 1/4 cup sugar and place apples over batter in loaf pan. Pour remaining batter over apples. Bake as above.

Cranberries are very very tart & sour after choppping them toss with 1/4 to1/2 cup of sugar before adding to batter or you will be biting down on a very sour cranberry ! I love cranberry bread I always add walnuts and this recipe is a great master recipe.. can add many different ingredients if using Splenda use half Splenda & half sugar or your recipes will not turn out can also add some applesauce to make it extra special and moist about 1/2 cup Grandma knows ... MMMMMMMMMMMMM Good!

I am going to try splenda in stead of sugar, egg beaters in stead of egg & use half whole wheat flour & half white flour & use olive oil instead of veg oil. Wil try it one time to see how it does.

I have never used olive oil in baking unless specified in a recipe. Reason is olive oil has a different taste and is heavier. If the oil is a concern,a suggestion in many recipes is to use applesauce as a moistening ingredient. You can substitute all or part of oil with applesauce and I think it would work pretty well in this recipe. Good luck!

You can use melted butter instead of veg. oil, but not Olive oil. I have cooked for more than 60 years and used to bake cakes professionally.

You can use vegetable oil or melted butter/ margarine but NOT olive oil... olive oil has a different taste and will react differently in these kinds of recipes Do not use all Splenda your bread will NOT rise Instead use half sugar & half Splenda that works very well Besides cranberries and walnuts can use raisins, chocolate chips drained cherries, chopped apple, 1/2 cup applesauce drained crushed pineapple cinnamon vanilla almond extract and chopped almonds I always add 2 or 3 Tablespoons melted buteer for moistness and flavor so versatile Its all good!

Why don't u try stevia , artificial sugars like splenda are bad for u. Just saying .
