Chicken Zucchini Casserole

Creamy chicken casseroles are some of our favorites year-round, and this Chicken Zucchini Casserole is no exception. Featuring one of summer's most popular veggies, this casserole is perfect for those summer weeknight dinners. 

What You'll Need

  • 1 (6-ounce) package chicken stuffing mix
  • 1/2 cup (1 stick) butter, melted
  • 2 cups diced cooked chicken
  • 1 cup shredded zucchini
  • 1 cup shredded carrot
  • 1/2 cup chopped onion
  • 1 (10-3/4-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
  2. In a large bowl, combine the stuffing mix and butter. Reserve 3/4 cup of stuffing mixture; set aside.
  3. Add the remaining ingredients to the stuffing mixture; mix well. Spoon chicken mixture into baking dish and top with reserved stuffing mixture.
  4. Bake 40-45 minutes or until heated through.

If we could give this recipe a 10 we could. I think it is the best tasting casserole I have ever had and I have had a lot of them!

This is yummy. I've made tons of zucchini casseroles over the years but never ones with shredded squash. The shredding keeps the dish light in texture. I used rotisserie chicken and a low sodium cream soup to make a little more healthy. My hubby loved it and he's not a squash kinda guy.....definitely a keeper.

Chicken, stuffing, and the zucchini I just picked out of my garden? Great! I'm looking for zucchini recipes now, and I know this one will be a keeper. It's surprising that this recipe contains zucchini and carrots. This will be a hearty meal with lots of colorful veggies. Thanks for the great dinner idea.

Chicken + veggies -- how could you go wrong?

This was OK, but not what I expected. It is almost like a chicken pot pie, but without the pie crust. The stuffing mix sprinkled on top, came out too hard. I may try it again, leaving off the top stuffing and sprinkling cheese on top.
