Pina Colada Muffins

What You'll Need
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 (8-ounce) can crushed pineapple, drained
- 1/2 cup shredded coconut
- 1 teaspoon rum flavored extract (optional)
What to Do
- Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray or use paper liners.
- In a large bowl, combine flour, sugar, baking powder and salt.
- In a medium bowl, beat together egg and milk. Stir in pineapple, coconut, and rum extract. Add to flour mixture; stir until mixed (batter will be stiff).
- Spoon into prepared muffin tin, filling each cup about two-thirds full. Bake 20 to 25 minutes or until toothpick inserted comes out dry. Let cool.

I bet some cream of coconut would be good in them. It helps make cakes moist so it couldn't hurt muffins.

I was so excited to make this because I'm crazy about coconut. But the muffins are very dry and course, and impossible to get out of the cupcake liners. Is it because there's no shortening in the recipe?

i tried it and like you,love coconut and pina colada anything.however they were not very good.sort a bland and very dry.if i do try them again i will add shortening or butter and maybe a little bit more juice.id say maybe a stick of butter or equivalent in shortening would help a lot.

I am sure you could make this, using a white cake mix. Then add the pineapple, coconut and rum extract. We have not tried this in our Test Kitchen, so we can not guarantee the results. Thank you for your question and enjoy!
