Try adding some mayonaise!!

I bet some cream of coconut would be good in them. It helps make cakes moist so it couldn't hurt muffins.

I was so excited to make this because I'm crazy about coconut. But the muffins are very dry and course, and impossible to get out of the cupcake liners. Is it because there's no shortening in the recipe?

i tried it and like you, love coconut and pina colada anything.however they were not very good.sort a bland and very dry.if i do try them again i will add shortening or butter and maybe a little bit more say maybe a stick of butter or equivalent in shortening would help a lot.

Is there any way to make this with a cake mix? It sounds wonderful. Hope you can. Thanks, Brenda Gale

I am sure you could make this, using a white cake mix. Then add the pineapple, coconut and rum extract. We have not tried this in our Test Kitchen, so we can not guarantee the results. Thank you for your question and enjoy!
