Say hello to great coconut and chocolate flavors with this Coconut Joys recipe. It's one of our favorite potluck ideas, too! They'll have everyone exclaiming, "OOH IT'S SO GOOD!!"

What You'll Need

  • 1/2 cup butter
  • 2 cups sifted powdered sugar
  • 3 cups flaked coconut
  • 1/3 cup (2-ounces) semisweet chocolate chips

What to Do

  1. Melt butter in a saucepan over low heat; remove from heat. Stir in powdered sugar and coconut; shape into 3/4-inch balls. Chill until firm.
     
  2. Place chocolate chips in a small heavy-duty, zip-top plastic bag; seal. Submerge in hot water until chocolate melts. Snip a tiny hole in 1 corner of bag, and drizzle chocolate over coconut balls. Let candies stand until firm; store in refrigerator.

Notes

If extra chocolate is what you desire, you'll want to make Chocolate-Covered Coconut Joys. Simply microwave 2 cups (12 ounces) semisweet chocolate chips in a 2-cup glass measuring cup at HIGH 1-1/2 minutes or until melted, stirring twice. Then dip coconut candies into melted chocolate, allowing excess to drip, and place on wax paper. Let candies stand until firm; store in refrigerator.

How long can these be stored in the fridge?

I appreciate the note for the extra chocolate version of the coconut joy candy. I will have to make some of both. This is a really easy recipe and yielding three and a half dozen candies, this is a treat to make and pack for the holiday candy/cookie packages.

A joy to be sure. I love coconut and when I find any item in the store with coconut I usually buy it. I also make a lot of recipes with coconut in them as well. This one is really easy and with a little time in the kitchen, I can have have my own coconut joys made.

I have made these and they are great and go so quick! I made some with milk chocolate drizzled over the top and some dipped in dark chocolate. They were the first things to disappear on the dessert table. The next time I make these I'm thinking of adding some chopped almonds to the coconut mixture. Everyone love the homemade candies and cookies and not only around the holidays. With this easy to make recipe I can whip some up and give as gifts to the neighbors this Christmas season. My question is, does anyone know if I can freeze faked coconut in the bags? Here in Mexico I cant get it so I have a friend bring it to me from the states but i'm saving it for Thanksgiving/Christmas time. Dont want to just freeze it ruin my precious, hard to come by coconut. Anyone know? We really miss Almond Joy Mound bars so this will be as close as we can get.

Hi there! Yes, flaked coconut can be frozen for up to one year. We recommend laying it flat in a gallon zip-close bag when freezing. This should help to preserve the flaked coconut evenly. Enjoy!

This would be cute to use white chocolate and food coloring...green/red for Christmas, red for Valentines, red/blue for patriotic celebrations, orange/brown for Halloween/Thanksgiving, etc.

Cannot wait to make these. I will use the dark chocolate. Nothing better than chocolate and coconut.

I MAKE THESE ALL THE TIME AND EVERYONE WHO EATS THEM ARE AMAZED HOW GOOD THEY ARE. I TOO USE A WHOLE ALMOND ON SOME AND THEY ARE A BIG HIT WITH CO-WORKERS AND CHURCH FAMILY.

These are scrumptious! I actually stuck whole almonds in some of these (it was reminiscent of my fav candy bar, Almond Joy). I melted a whole bag of dark chocolate morsels in a double-boiler and half-dipped the balls in the chocolate. However, the next time I make them I plan to cup the amount of powdered sugar in half because these are WAY sweet.

This sounds right up my alley. I love Mounds and can hardly wait. Could not be simpler, either way, drizzled or coated.
