Bacon and Cheese Potato Casserole

If you love the smoky flavor of bacon then you'll love our comforting Bacon and Cheese Potato Casserole. This one dishes up hot 'n' hearty to team with any of your main dish favorites.
What You'll Need:
- 3 1/2 cups water
- 1/2 cup (1 stick) butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 1/2 cups instant potato flakes
- 1 small onion, finely chopped
- 1/2 cup bacon bits
- 1 1/2 cups (6 ounces) shredded Swiss cheese
- 1 cup (1/2 pint) heavy cream
- 1 to 2 scallions, thinly sliced
What To Do:
- Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
- In a saucepan, bring water, butter, salt, and pepper to a boil over high heat. Remove saucepan from heat and gently stir in potato flakes, onion and bacon bits until well combined.
- Spoon potato mixture into prepared baking dish. Sprinkle with cheese then pour cream over top. Sprinkle with scallions.
- Bake 35 to 40 minutes, or until heated through and edges are golden.
Notes
- For those of you who are skeptical about using potato flakes, trust us on this one...you won't be disappointed.
- And feel free to substitute shredded Cheddar cheese instead of the Swiss or your favorite variety.

I love casseroles. You throw all of the ingredients in a baking dish and bake it and it is usually hearty enough to be a full meal. I like the sound of this one because I like all of the ingredients, but I would have to make half of it with no onions as my husband hates them.

I made these potatoes for Thanksgiving and they were excellent. The instant mashed potatoes work really well, and you'd never know :-) I used a large clove of finely chopped garlic in the potato mixture rather than onions. I had half and half on hand so used it and it worked great. I added 1/4 c sour cream to the half and half. This dish tastes like twice baked potatoes. So good! You can crumble cooked bacon on top. I will be making this again! Thanks to the Mr. Food team for a winner recipe!

This was really good. I served as a side dish with baby back ribs as a replacement for twice baked potato. It was so much easier and got rave reviews from everyone. I omitted the onions in the potatoes but did top with scallions. I used Neuske's applewood smoked bacon which I think really added to the flavor. I will definitely make this again.

SO good! Quick and easy-my boyfriend ate it all in two sittings (I only got one helping!). Vegetarian idea: substitute the bacon for broccoli.

Did no one notice that the ingredients call for "1 cup (1/2 pint) of heavy cream"... 1cup is 8 ounces... so is a pint. Same amount. So, should it be a cup or 1/2 cup??

A pint is 16oz, thus 1/2 pint is 8oz or 1C

I didn't have heavy cream on hand, so I made a mixture of sour cream and milk (about 50/50) and it was fantastic

This recipe was a BIG hit in my house. I was skeptical about using the potato flakes, but they actually turned out really well. I will definitely use this again. I may try it with REAL mashed potatoes and I did actually use REAL crumbled bacon pieces. Thanks Mr Food for this wonderful recipe!! :)

I understand the ease of instant potatoes and packaged bacon bits, but try this with REAL mashed potatoes and crumbled bacon---SUPERB!
