When I can't quite make up my mind between cookies, candy, or cheesecake...it doesn't matter! With this one, I don't have to choose!

What You'll Need

  • 1 (16.5-ounce) package refrigerated chocolate chip cookies dough
  • 2 (8-ounce) packages cream cheese, softened
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 4 (1.4 ounce) toffee candy bars, coarsely chopped

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9-inch deep dish pie plate with cooking spray.
     
  2. Slice cookie dough into 24 slices and arrange on bottom and up sides of prepared pie plate. Press dough together, making a uniform crust; set aside.
     
  3. In a large bowl, with an electric beater on medium speed, beat cream cheese, eggs, sugar, and vanilla 1 minute, until well mixed. Stir in candy pieces and pour into pie plate.

  4. Bake 40 to 45 minutes, until center is firm. Remove from oven and allow to cool. Cover loosely then chill at least 4 hours before serving.

I have not made this yet, but it looks and sounds good. I'm a Toffee kind of person. I plan to make it for our next church (Forever Young) potluck. I will follow the recipe for one cheesecake and for the other I will sprinkle the chopped candy on the bottom of the crust, to see which one I like best.

I have been making this recipe for 25 years now; first got it watching Mr. Food on TV in Korea when my husband and I were newlyweds. I make the oatmeal scotchies dough from the back of the Nestle Butterscotch chips bag, and divide it in half. A little more trouble but the flavor is worth it, and you can freeze the other half and make two pies with it.

The recipe calls for a packaged cookie dough. You will need to look online for the recipe. I know it is a bit of a hassle ( I'm a scratch cook myself ) but it is worth it, just to see the different mixes that people come up with.
