Caribbean cooking continues to be a rage at all the restaurants and we'll show you how easy it is to do at home. Try our Chicken Carib for a tasty ticket to the tropical Caribbean.

What You'll Need

  • 1 (3- to 4-pound) chicken, cut into 8 pieces
  • 2 tablespoons butter or margarine
  • 1/2 cup chopped onion
  • 1 garlic clove, crushed
  • 1 (8-ounce) can tomato sauce
  • 3/4 cup chicken broth
  • 1/2 cup stuffed green olives, drained and sliced
  • 1/4 cup light raisins
  • 1 tablespoon white vinegar
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon allspice
  • 1 green bell pepper, cut into strips

What to Do

  1. In a large skillet, brown the chicken in butter. Remove chicken; set aside. Add onion and garlic to skillet, cook until lightly browned.

  2. Stir in tomato sauce, chicken broth, olives, raisins, vinegar, chili powder, and allspice.

  3. Return chicken to skillet; spoon sauce over chicken, cover and simmer for 30 minutes. Add the green pepper; cover and cook for 10 minutes more or until chicken is fork-tender and no pink is showing.

Notes

Serve over hot cooked rice. Dark raisins, bottled garlic, or stuffed olive pieces will work just as well.
