Roast Chicken and Kiwi with Raspberry Glaze

Want something a little fancy-looking for company? Well, here's a way to make roast chicken look like a million dollars, but it's not harder or more expensive to make?.Like I said, just a little fancy-looking.

What You'll Need

  • 1 chicken (about 3 pounds), cut in half
  • 1/4 to 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons butter, melted
  • 1/2 cup seedless raspberry preserves
  • 1/4 cup red or sweet wine
  • grated peel of a 1/2 lemon
  • 2 kiwifruit, peeled and cut into 4 to 5 slices per kiwi

What to Do

  1. Preheat the oven to 400°F.

  2. Sprinkle the chicken with salt and pepper. Place the chicken, skin side up, in a single layer in a 9"x13" baking pan. Brush the chicken with melted butter. Bake for about 45 minutes, basting frequently, or until the chicken is fork-tender and no pink remains. Drain off the fat.

  3. Meanwhile, in a medium-sized saucepan, mix together raspberry preserves, wine, and lemon peel. Cook over a low heat for about 5 minutes or until slightly thickened. Spoon over the chicken, then baste generously. Top with kiwi slices, dividing the slices evenly over both halves of the chicken.

  4. Return to the oven and bake about 3 minutes more, or until the fruit and chicken are well glazed.
