When you don't know what to have for dinner, we hope this is the recipe that comes to mind! Our Skillet Chicken and Veggies is fast, easy, and totally delicious. For kids and adults alike, this recipe is filled with flavor and is sure to help create good memories around the dinner table. Needless to say, this recipe is one you'll want to keep in your back pocket. 

What You'll Need

  • 1 (1-ounce) envelope onion soup mix
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • Juice from 1/2 fresh lime
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 1/4 pound boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 1 (16-ounce) package frozen mixed vegetables

What to Do

  1. In a large skillet, combine onion soup mix, oil, water, lime juice, cayenne pepper, Italian seasoning, and garlic powder. Bring mixture to a boil over medium-high heat.
  2. Stir in chicken strips and cook 5 minutes. Stir in vegetables and continue cooking 4 to 5 more minutes, or until chicken is no longer pink and vegetables are heated through.

I used slow cooked chicken breast that I keep on hand for quick dinners. served over pasta for husband, plain for me for low carb. Very good.

I do all my baking and cooking with a scale. It is much more accurate than measuring. I feel is isn't so fussy with how much chicken you use. My first scale was difficult for me to read in my later life as it was like a clock to read, now I picked up a digital one up at Walmart, which works better for my eyesight.

Do NOT buy a "cheap scale". You will be better off spending a bit more and getting one that performs well.

Ground red pepper and cayenne are the same thing for the most part so you definitely could substitute one for the other. For soloman, maybe you SHOULD invest in a cheap scale so you can weigh you meat. And you definitely should drain the liquid from canned veggies. Obviously, these are my opinions, but hope it helps.

Uh without a scale HOW am I supposed to figure out what 1 1/4 lbs of chicken breast is? With a commercial breast is there a rule of thumb to calculate this? While I'm at it, if I use canned veggies, do I drain the water off before I put them in the mix? Just wondering if there might be too much liquid if I don't. Thanks,

I have "red pepper flakes," but not ground red pepper. Will ground cayenne pepper do?

I fixed this recipe. I also fixed the pilaf rice as it suggested. Both were pretty good. My eight year old loved it all.

Now, If I could only get to the recipes, all would be great! Let us know so we dont leave you. Your recipes are important to me and I'm sure many others.
