South Philly Chicken Parmesan

What You'll Need

  • 1/3 cup seasoned bread crumbs
  • 3 chicken breasts, split, skinned, and boned
  • 2 tablespoons olive oil, plus more as needed
  • 1 jar (14 ounces) prepared spaghetti sauce (about 1-1/2 cups)
  • 2 cups (8 ounces) shredded mozzarella cheese
  • 2 tablespoons Parmesan cheese

What to Do

  1. Preheat the oven to 350F.

  2. Place the bread crumbs in a shallow dish. Coat the chicken evenly on both sides with the bread crumbs. In a large skillet, heat the oil over medium-high heat. Place the chicken in the skillet, 3 pieces at a time, and cook for 2 to 3 minutes per side, or until golden, adding more oil if needed.

  3. Pour half of the spaghetti sauce evenly into a 9" X 13" baking dish. Place the chicken in the baking dish and pour the remaining sauce over the chicken. Sprinkle with the mozzarella cheese, then the Parmesan cheese.

  4. Bake for 35 to 40 minutes, or until a fork can be inserted into the chicken with ease and no pink remains.
