Last-minute company? Need something in a hurry? Easy Peanut Butter Cookies are fast and delicious! However, you're probably gonna want these around all the time, company or not! You will be surprised how easy and how tasty these easy peasy cookies are fresh out of the oven. This is one of our easiest and favorite simple cookie recipes.
What You'll Need
- 1 (14-ounce) can sweetened condensed milk
- 3/4 cup peanut butter
- 2 cups biscuit baking mix
- 1 teaspoon vanilla extract
- Sugar
What to Do
-
Preheat oven to 375 degrees F.
-
In a large bowl, beat sweetened condensed milk and peanut butter until smooth. Beat in biscuit mix and vanilla extract; mix well.
-
Shape dough into 1-inch balls, then roll in sugar and place 2 inches apart on ungreased baking sheets; flatten with a fork.
-
Bake 6 to 8 minutes, or until light golden (do not overbake). Cool in pan. Store, tightly covered, at room temperature.
Notes
-
For a nice variation called Peanut Blossoms, do not flatten the balls of dough. Bake as above, remove from oven, and press a milk chocolate candy kiss into the center of each cookie.

I tend to buy natural peanut butter. Will that work in this recipe or should I add some ingredients, like salt?

The Test kitchen has not tried this recipe with natural peanut butter so we are not sure it will work due to the different consistency of the peanut butters. We think it would probably work but we are not 100 percent sure.

I had to use parchment paper because the bottoms got very brown and stuck to the cookie sheet. Also did anyone else have the center of the cookies doughy?

I was surprised at just how good the cookies were with such a simple and fast recipe. They were soft and just about melted in my mouth. I would have no problem making them for company, they are that good. I will make them again and again..lol By the way, there is no error in this recipe. I made them exactly like it said.

I made these today as per directions and was very pleasantly surprised. So easy and yummy !! I wish people who comment would rate the recipe as a whole and keep what they would do differently to themselves. If you want to publish your own recipes get your own format. Its not fair to anyone. I have followed Mr. Food for years now and think he's a Rock Star!!

EASIER Peanut Butter Cookies 1 cup peanut butter 1 cup sugar 1 egg Mix until well blended, chill then drop by teaspoonful balls on cookie sheets. Will still be soft and light when cooked for 8-10 min. but darken and harden as they cool.

I would love to try this recipe, but I will wait until we are told if the corrections suggested on 10-21-12 were made.

This sounds like a great recipe. I looked around and found cookie recipes on other web sites that use the same amounts of baking mix and sweetened condensed milk, so I do not think the amounts are in error. I think the key is to make sure one actually is using sweetened condensed milk and not evaporated milk. They are not the same thing.

This recipe needs correction.. Either less milk or more bisquick & peanut butter. As is it is way too thin to roll into balls
