What You'll Need

  • 1 (16.3-ounce) package refrigerated buttermilk biscuits (8 biscuits)
  • 10 eggs
  • 1/4 cup milk
  • 2 scallions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup diced ham
  • 1 1/4 cup (5 ounces) shredded Italian-blend cheese, divided

What to Do

  1. Preheat oven to 375 degrees F. Coat a 2-1/2-quart casserole dish with cooking spray.
  2. Cut each biscuit into 6 pieces.
  3. In a large bowl, whisk together the eggs, milk, scallion, salt, and pepper until well mixed. Stir ham and 3/4 cup cheese into egg mixture. Add biscuit pieces and toss to coat evenly. Pour biscuit mixture into prepared casserole dish.
  4. Bake 45 minutes, or until center is set. Sprinkle remaining cheese over top and continue to bake just until melted.

Just a Suggestion!

  • This is best served right from the oven.

We don't eat pork products -- can I substitute cooked turkey or beef sausage for the ham? Would I need to adjust other ingredients if using turkey or beef sausage instead of the ham?

Hi there! Yes, you can substitute any other meat product you prefer. You don't have to change any other ingredients.

Sounds great! Can it be made ahead of time & baked just before serving?

Hi Cukes! Unfortunately, this recipe cannot be made ahead to be baked later. The refrigerated biscuits would poof out of the pan.

Can this be prepared the night before?

Looks and sounds delicious. Can't wait to try it!

Do you have any recipies for only 1 person? Thanks, Lorraine Curtiss lorraine7589curt@yahoo.com

I cut the receipe in half and freeze the leftover for another day. Save times and money Lorraine.
