I've been seeing a lot of great catfish recipes on this site lately, and this one is so unique! A little bit of heat from the jalapenos, a little bit of sweet from the brown sugar, and who doesn't love bacon? When making "stuffed" fish, a lot of times the stuffing falls off the top or it can get a little bit over - browned. The bacon is a great way to add wonderful flavor while keeping the stuffing in place.
