Onion Crusted Salmon

Salmon sure is popular in Norway. And when we top fresh salmon with a crispy onion topping like they do there...WOW!

What You'll Need

  • 4 salmon fillets (6 ounces each)
  • 1 can (2.8 ounces) French-fried onions
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground thyme
  • 1 teaspoon dried dillweed
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons butter or margarine, melted

What to Do

  1. Preheat the oven to 350 degree F.

  2.  Place the salmon in a 7" x 11" baking dish that has been coated with nonstick vegetable spray.

  3. In a food processor or blender, combine the remaining ingredients except the butter and process until the onions are in crumbs (about 5 seconds).

  4. Place 1/4 cup of the onion mixture on each fillet and drizzle with the melted butter.

  5. Bake for 20 minutes or until the fish flakes easily with a fork.
