Creamy Lemon Tartlets

Sweet tooth? We've got your cure right here with these Creamy Lemon Tartlets! Lemony, little, and lovely, these babies are worthy of an audible "yum!"
What You'll Need
- 1 (2.1-ounce) package frozen mini phyllo pastry shells
- 1/3 cup lemon curd
- 1/2 cup whipping cream
- 1/4 teaspoon almond extract
- Fresh mint leaves (optional)
What to Do
- Bake pastry shells according to package directions; cool completely.
- Beat lemon curd, whipping cream, and almond extract at medium speed of an electric beater until thickened and soft peaks form. Spoon into baked pastry shells. Chill tartlets 1 hour. Garnish with fresh mint leaves, if desired.
Notes
Mix things up a bit! If you're having a crowd, try these tartlets with orange or strawberry curd, too. Or why not serve all 3 flavors at once? Just separate the recipe 3 times, each time using a different flavored curd.
