Cannoli Pie

Better leave room for dessert, 'cause our Cannoli Pie is a new take on the classic Italian cannoli. Mmm, mmm! We can't get enough of this!
What You'll Need
- 1 (32-ounce) container ricotta cheese
- 1 1/2 cup confectioners' sugar
- 1/3 cup chopped maraschino cherries
- 1/3 cup blanched chopped almonds
- 1/3 cup mini chocolate chips
- 1 (9-inch) chocolate graham cracker pie crust
What to Do
- In a large bowl, stir ricotta cheese and confectioners' sugar until smooth and well combined. Stir in cherries, almonds, and chocolate chips.
- Spoon into pie crust, cover, and freeze for at least 3 hours.
- Remove pie from freezer and allow to sit for at least 10 to 15 minutes before cutting. Cover and store any leftovers in the freezer.
Notes
- To garnish, top each slice with a dollop of whipped topping and a maraschino cherry just before serving.

The first time I made this I used Greek non-fat yogurt which I think has too much of a "bite" or sourness to it. I also went too heavy on the orange zest. I am now going to try to use regular low fat yogurt and go easy on the zest. I also use vanilla wafer crumbs instead of graham crackers. Every recipe seems to use graham crackers and I personally like the flavor of the vanilla wafer crumbs better

I made the cannoli pie but I put the filling in the small indivisual pie cups so everyone got thier own pie the end for a great dinner. Living alone you don't have to thaw the whole pie I take one out when I sit to eat my meal

I made this, but put mixture into mini cupcake liners inside a mini cupcake tin and froze them in the cupcake tin. Once they were frozen, I popped them out of the cupcake tin, and put them inside a freezer container and back into the freezer for a quick dessert or mini treat. I highly recommend this recipe!!!
