It's time to get your Hawaiian luau on! The combination of pineapple and ham means only one thing... tropical dinner fun. The sweet, tangy pineapple combines with the salty taste of the ham to make for one delicious dish that's bound to be a hit at your next backyard barbecue. And don't worry about following the recipe exactly. Coming up with your own special twist is half the fun of cooking!

What You'll Need

  • 6 to 8 wooden or metal skewers (Soak wooden skewers 15 to 20 minutes before threading.)
  • 2 pounds ham steak, cut into 2-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 2 large red or green bell peppers, cut into 1-inch squares
  • 1 cup pineapple juice
  • 3/4 cup light brown sugar

What to Do

  1. On each skewer, alternately thread chunks of ham, bell pepper, and pineapple. Place skewers in a 9- x 13-inch baking dish.
     
  2. In a medium bowl, combine remaining ingredients; mixing until sugar is dissolved. Reserve 1/2 cup marinade for serving.
     
  3. Pour marinade over kebabs, cover, and refrigerate about 30 minutes, turning occasionally.
     
  4. Preheat grill to medium-high heat.
     
  5. Grill kebabs 9 to 12 minutes or until heated through, basting with excess marinade, and turning frequently. Serve with reserved marinade.

Made these pineapple ham kebabs for dinner a couple nights ago. Used red bell peppers for color and for more mellow pepper flavor. My supermarket's produce department has "ready-butchered" fresh pineapple, making the prep even easier. A very simple, quick, and exceedingly tasty main dish, with just a touch of the exotic. A seasoned rice side dish made it a complete and filling meal! Thanx, Mr. Food!
