Honey Mousse

Don't wait for a party to enjoy the buzz over this honey-kissed dessert treat. It’s easy enough to make for satisfying a weeknight sweet tooth, so try it tonight!

What You'll Need

  • 1/2 cup honey
  • 3 eggs, beaten
  • 2 cups (1 pint) heavy cream

What to Do

  1. In a small saucepan or a double boiler, combine the honey and eggs over very low heat, whisking until the mixture is thick and bubbling. Remove from the heat and let cool to room temperature.
     
  2. In a large bowl, beat the cream until soft peaks form. Slowly beat in the honey mixture, continuing to beat until well mixed and stiff peaks form.
     
  3. Serve, or cover and chill until ready to serve.

It sounds to me like it was HOT. Shouldn't have been. It should have cooled before adding it to the whipped cream.

I tried this dessert and it was a flop. I'm pretty sure I have a technical issue. I cooked the honey and eggs in a saucepan. It had the consistency of thick pudding. I whisked it continually. Then once I added it to the beaten heavy cream, it broke down the texture of the cream and curdled the entire thing. I had more cream left over so I tried it a second time, whipped the cream, and just added honey without cooking anything to see what that would do. It curdled again. What did I do wrong?
