Crispy Avocado Wedges

Our Crispy Avocado Wedges are a summer-fresh way to enjoy something crispy-crunchy. They're also a healthier alternative to french fries. Serve them with our homemade cilantro dipping sauce and you've got yourself a tasty snack (or side dish) that can't be beat!
What You'll Need
- CILANTRO DIPPING SAUCE
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 1 avocado, pitted and peeled
- 1 jalapeno pepper, seeded
- 1/2 cup fresh cilantro
- 2 teaspoons lime juice
- 1/4 teaspoon salt
- AVOCADO FRIES
- 4 firm avocados, pitted, peeled, and sliced
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 tablespoon water
- 2 cups panko bread crumbs
- 1/2 teaspoon paprika
- Cooking spray
What to Do
- In a blender, combine Cilantro Dipping Sauce ingredients; pulse until smooth and creamy. Refrigerate until ready to serve.
- Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
- In a large bowl, place avocado slices and drizzle with lime juice; toss gently.
- In a shallow dish, combine flour, salt, and pepper; mix well. In another shallow dish, whisk eggs and water. In a third shallow dish, combine bread crumbs and paprika; mix well.
- Dip each avocado slice in flour mixture, egg mixture, and bread crumb mixture, coating evenly on all sides. Place on baking sheet. Lightly coat with cooking spray.
- Bake 12 to 15 minutes, or until golden and crispy. Serve with Cilantro Dipping Sauce.

This is a baked version, but in the time it takes to preheat and bake this, you could have eaten these already if you fried it. I don't fry much, but it takes only a 1/2" of oil (avocado oil is perfect) in a pan and it fries beautifully and quick. Use FIRM but ripe avocados. I add some chili powder rather than paprika. You MUST however add salt to the panic and add a bit more when done. Avocados need salt or it is bland. I have seen many dips on the internet using half the ingredients of this one. Suit yourself. But these are a great snack, healthy, and unique.

The creamy avocado cilantro dipping sauce is worth checking out on its own - I could think of a ton of uses for this. It would make a great topping for a taco salad, a dip for fresh raw veggies, or even as a flavorful sandwich spread! I've made a lot of things that incorporate fresh avocado before, but have never tried it cooked before. I was really impressed!

I snack recipe that requires a lot of work. My oldest son has adopted a vegan lifestyle and this may be a recipe that he would enjoy. I know the dipping sauce is out because of the mayo but I know he would appreciate the new way of eating the avocado.

I know avocado is a healthy food and I attempt to incorporate it into our diets. This will be a good one when then avocado are plentiful and less expensive than they are right now.
