What You'll Need
- 2 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1 medium-sized onion, chopped
- 4 medium carrots, sliced
- 2 cups fresh broccoli florets
- 2 cups sliced fresh mushrooms
- 1 cup sliced celery
- 4 cups water
- 4 (10-1/2-ounce) cans condensed chicken broth

What to Do
- In a large pot or Dutch oven, heat oil over medium-high heat; add garlic and onion and saute until onion is tender.
- Add remaining ingredients, except the pasta, and bring to a boil. Reduce heat and simmer 20 minutes.
- Meanwhile, in a large pot of boiling salted water, cook pasta to desired doneness; drain and stir into soup. Heat through and serve.

Looking at this as a Vegan, I think I could lose the chicken & ck broth and add nutritional yeast and other seasonings. Another great way to use noodles--without the eggs of course.

This sectioon is called RATINGS AND REVIEWS for a reason so why are there so many comments that are not Ratings nor Reviews? I think this section is for those who have tried the recipe not for anything else. Come on people, give us a break!

Nutritional information would be helpful. As a diabetic, in which sodium content has a tendency to upset the blood sugar readings, I actually work within those limits, as well as watching carbs.

Sounds very tasty BUT totally useless for a single senior living alone, would have enough soup for 6 months
