Spinach Egg Drop Soup

For eye appeal and extra texture, flavor, and color, like to add sliced fresh shiitake or button mushrooms and thinly sliced red bell pepper. Sprinkle them into the empty bowls along with the spinach, ladle soup into bowls and enjoy!

What You'll Need

  • 6 cups chicken broth
  • 1 large egg, lightly beaten
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • 2 green onions, chopped
  • 2 cups torn fresh spinach

What to Do

  1. Bring broth to a boil; reduce heat to a simmer. Slowly add egg, stirring constantly, until egg forms lacy strands. Immediately remove from heat. Let stand 1 minute.
     
  2. Stir in soy sauce, sugar, and green onions. Divide spinach among 6 bowls; ladle soup over spinach. Serve immediately.
