Rice and Broccoli Melt

Here's a yummy way to have your rice and veggies all in one dish. (Wait till you see how thick and chunky it is!)

What You'll Need

  • 1 (16 ounce) package frozen broccoli, thawed and drained
  • 3 tablespoons chopped scallions (about 1 scallion)
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 2 cups hot cooked rice
  • 1/3 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1/2 cup (2 ounces) Cheddar cheese
  • 3/4 cup French fried onions, or bread crumbs (optional)

What to Do

  1. Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole dish with cooking spray.
     
  2. Place broccoli in a medium-sized bowl and add scallions, garlic, oil, rice, mayonnaise, and soy sauce, mixing well.
     
  3. Put mixture into prepared casserole dish and top with cheese. Sprinkle with French fried onions, if desired. Cover and bake 25 minutes, until cheese is melted.
     

Notes

Three-quarters of a cup of uncooked rice will make 2 cups of cooked rice. It's so easy to make this recipe your own because you can use onions instead of scallions, fresh broccoli instead of frozen (just steam or boil it before adding), light mayonnaise instead of regular, and you can even add some pepperoni slices or other cooked sausage to make it a lunch or light supper dish all by itself!

I'd leave out the soy sauce but other than that, it sounds good.
