Muffin Tin Meat Loaves

Have you ever thought about making one of your family's favorite dinners in a muffin tin? Well, it's time to give it a try! Our recipe for Muffin Tin Meat Loaves is more than just easy and convenient, it's a dinnertime must-have!
What You'll Need
- 1 1/2 pound ground beef
- 1 egg, slightly beaten
- 1 1/2 cup shredded zucchini (about 1 medium)
- 1 teaspoon garlic powder
- 1/2 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup bread crumbs
- 1/4 cup water
- 1/4 cup ketchup
What to Do
- Preheat oven to 350 degrees F.
- In a large bowl, combine all ingredients except ketchup, mixing lightly but thoroughly. Place about 1/3 cup of beef mixture into each of 12 medium muffin cups, pressing lightly; spread ketchup evenly over tops.
- Bake 20 to 25 minutes, or until no pink remains and juices run clear.
Notes

Love this recipe in a 6 muffin tin!You can customize the tops or make all the same. AND they cook in 1/2 the time!!

If you live alone and don't want to bake a FULL loaf pan meatloaf I find this extremely convenient and cost effective way to stretch a budget. Eating groundbeef seems to be the ONLY affordable way to eat beef these days, but I have also used Ground Chicken and Turkey to make a loaf this way.

So true shadowcam! I freeze the extra mini meat loaves individually, so I can heat them up one at a time for myself.

Fun way to do meatloaf. I use large sized muffin tin for 6 muffins. Top each one differently cheese, salsa, BBQ sauce, ketchup, onion slice, bacon, etc. Easy and does not need a drip pan if you use lean meat.

I plan on using my own meat loaf recipe, but using muffin tins sounds like a winning idea.

I use shredded carrots, barbeque sauce and horseradish with egg, & bread crumbs. also like to use meatloaf mix as meat instead of just ground beef

I have been using my muffin tins like this for years. It's a great way to make individual servings of stuffing as well, as meat loaves and mac & cheese. Happy cooking!!

It's a cute idea, but not very practical. You would need to use a cookie sheet under the muffin pan, to catch the drippings, and you will have a messy cleanup. I'll stick to my own recipie. Every one loves it! Even meat loaf haters.... once they "try" mine they always ask for "seconds". I love to tease them, and say that they have now been converted... LOL

1 1/2 cups shredded zucchini (about 1 medium zucchini) LEAVE THAT OUT CUT BREAD CRUMBS TO 3/4 CUP OR LESS THE ZUCCHINI IS WATER
