We raided our pantry to come up with this casserole inspired by one of your favorite Italian soups! Our Minestrone Casserole is thick, hearty, and full of great flavors! That's why it's the perfect recipe for an easy Italian dinner at home.
What You'll Need
- 1 pound bulk Italian sausage
- 1/2 cup chopped celery
- 2 cups uncooked medium-sized pasta shells
- 2 (14-1/2-ounce) cans diced tomatoes
- 1 (15-ounce) can kidney beans, undrained
- 1 (12-ounce) package frozen whole kernel corn, thawed and drained
- 1 teaspoon dried thyme leaves
- 1 teaspoon garlic powder
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Preheat oven to 375 degrees F. Coat a 2-1/2-quart casserole dish with cooking spray.
- In a medium skillet over medium-high heat, cook sausage and celery 8 to 10 minutes or until browned; drain off any excess liquid.
- Pour sausage mixture into a large bowl and add remaining ingredients; mix well. Pour into casserole dish; cover and bake 50 minutes or until heated through and pasta is cooked, stirring twice throughout the cooking.

Delicious!! I used Italian seasoned diced tomatoes and it was a big hit. Will definately make again!!

Delicious! The only reason I had made this recipe was because I had all the ingredients on hand. The only change I made was to dissolve 1/2 cup corn starch in liquid and add to mixture before baking. Hearty!
