We've got a hot, hearty, guilt-free way to enjoy your favorite Old-Fashioned Chicken & Dumplings recipe! What You'll Need

  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 8 cups chicken broth
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon black pepper
  • 3 cups shredded cooked chicken

  • 1 cup reduced-fat biscuit baking mix
  • 5 tablespoons fat-free milk
  • 2 teaspoons chopped fresh dill

What to Do

  1. Coat a soup pot with cooking spray and heat over medium-high heat. Add celery and carrots; sauté 5 to 6 minutes or until tender. Stir in broth, poultry seasoning, and pepper; bring to a boil. Stir in chicken.
  2. Meanwhile, in a medium bowl, make dumpling batter by mixing together biscuit baking mix, milk, and dill until well combined. Drop 6 equal spoonfuls of dumpling batter into boiling mixture. Reduce heat to low and simmer 5 minutes; cover and cook an additional 8 minutes or until dumplings are cooked through. Serve immediately.

You can also use canned biscuits, slicing them into quarters as you add to final chicken w/broth. I use them at all times, easier and less messy. I have not tried to add vegetables to chicken and dumplins. Just the way I learned the recipe. It is easy to make, and is a hit here.
