This easy, tasty, baked egg skillet is perfect for your next lazy weekend breakfast. Plus, our Lazy Weekend Frittata is packed with healthy vegetables, so you can feel good about eating it!

What You'll Need

  • 1 baking potato
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped broccoli florets
  • 2 scallions, chopped
  • 1/3 cup chopped red bell pepper
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 eggs
  • 1/4 cup milk

What to Do

  1. Microwave potato on high 7 to 10 minutes or until tender. When cool enough to handle, cut into 1/2-inch chunks.
  2. Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add potatoes, mushrooms, broccoli, scallions, bell pepper, garlic, salt, and pepper. Cook until vegetables are tender and potatoes are lightly browned, stirring occasionally.
  3. Meanwhile, in a medium bowl, whisk together eggs and milk.
  4. Reduce heat to medium-low and add egg mixture. As mixture begins to set, push edge slightly toward center, allowing liquid to run to edges of the skillet. Reduce heat to low, cover, and allow to cook 8 to 10 minutes or until eggs are set. Slide frittata onto a serving plate, cut into 4 wedges, and serve immediately.

Oatmeal Cranberry Cookies

When you get a craving for fresh baked cookies, you have to do what you have to do. Luckily, here in the Test Kitchen, we can make cookies any time we want. Our go-to are these Oatmeal Cranberry cookies. Can you blame us? These sweet oats and tart cranberries are always a treat when washed down with ice cold milk. We wish you could smell the scent of cinnamon in the Test Kitchen, but making them in your home is just as tasty.
