Fruity and refreshing, Cantaloupe Sundaes will provide a sweet ending to any meal.
What You'll Need
- 2 teaspoons cornstarch
- 2 tablespoons water
- 1 (10-ounce) package frozen raspberries, thawed
- 2 cantaloupes, peeled and cut into 4 wedges each (see tip)
- 1 quart vanilla ice cream
What to Do
- Combine cornstarch and water in a medium saucepan over medium-high heat. Add raspberries; bring to a boil. Cook, stirring constantly, 1 minute. Cool.
- To serve, fill each cantaloupe wedge with a scoop of ice cream. Spoon raspberry mixture over ice cream.
Notes
To select the best melon, shake it and listen for the rattle of seeds. Pick a cantaloupe with a soft stem end, which has light yellow ridged or smooth outer shell. A melon with a green cast won't do.
