Frozen Mochaccino

What better way to celebrate Ice Cream Week than with a frozen version of trendy cappuccino? And with a bit of chocolate mixed in we have a heavenly mocha delight without all the loud hissing, bubbling (and mess!) of the cappuccino machine!

What You'll Need

  • 1 cup (1/2 pint) heavy cream
  • 1/4 cup confectioners' sugar
  • 2 tablespoons instant coffee granules
  • 1 teaspoon hot water
  • 1 quart chocolate ice cream, softened
  • Ground cinnamon for topping

What to Do

  1. In a medium bowl, with an electric beater on medium speed, beat the cream and confectioners' sugar until stiff peaks form.

  2. In a large bowl, dissolve the instant coffee granules in the water. Add the ice cream and 1 cup of the whipped cream mixture; mix well.

  3. Divide the ice cream mixture equally into six small clear plastic cups and spread the remaining whipped cream mixture over the top.

  4. Sprinkle with the cinnamon, cover, and freeze for at least 4 hours, or until firm.

Notes

I try to use clear plastic cups or, when I can find them, clear plastic coffee cups with handles so that we can see the different layers of the frozen cappuccino.
