A parfait glass filled with pureed fruit and clouds of whipped cream swirled together is the classic British dessert coined a "Fool." Don't let the name put you off though. Our easy Berry Fool recipe is a welcome weeknight or company-fancy dessert.

What You'll Need

  • 1 (12-ounce) package frozen raspberries or strawberries (not in syrup), thawed
  • 1/4 cup plus 1 tablespoon sugar, divided
  • 1 cup heavy whipping cream

What to Do

  1. In a blender or food processor, combine raspberries or strawberries with 1/4 cup sugar. Process until berries are pureed, scraping down sides when necessary.
  2. In a large bowl, beat heavy cream with mixer until soft peaks form. Add remaining 1 tablespoon sugar and continue whipping until stiff peaks form.
  3. Using a rubber spatula, gently fold in the raspberry puree, leaving some streaks of white whipping cream. Spoon into four individual parfait glasses. Refrigerate for 2 hours then serve.

This looks really good to me, since I love fruit and I love whipped cream. It also is extremely easy since it contains only a few ingredients that you mix together. This would be a perfect dessert to serve for company during a spring or summer gathering. But, it easy enough to make for no reason other than a sweet tooth.

nope, dont do berries/that much or kind of fruit

I used frozen whole raspberries and didn't care for the seeds in the finished product. Suggestions?

before mixing the raspberry puree with the cream try straining it with a very fine strainer. I did worked great! I love raspberries more then strawberries....when i puree them I strain them all the time. a little extra work but worth it for the raspberries

I wonder if you can use Cool-Whip? I don't see why not. Maybe even add a little yogurt?

I actually have done that...very good, too. :)
