Soft Chocolate Marshmallow Sandwiches

You had these devilishly good store-bought treats growing up, but once you make them yourself you'll never switch back.

What You'll Need

  • 1/2 cup vegetable shortening
  • 1 1/2 teaspoon baking soda
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup baking cocoa
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup (1-1/2 sticks) butter, softened
  • 1 cup marshmallow creme
  • 1 1/3 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract

What to Do

  1. Preheat the oven to 400 degree F.

  2. In a large bowl, cream the shortening, sugar, and egg until creamy. Add the cocoa.

  3. In a large bowl, combine the flour, baking soda, and salt. Add to the shortening mixture, alternately with the milk and vanilla.

  4. Drop by teaspoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes.

  5. While baking, beat the remaining ingredients together until smooth and creamy, to make the filling.

  6. Remove the cookies to a wire rack. Frost the flat side of half of the cookies with the filling and put the remaining cookies on top, making sandwiches. Refrigerate to firm up the filling.

    Makes about 20 sandwiches.

Notes

When dropping the dough, flatten it lightly to get a wider, thinner cookie 'cause they rise while baking.

READ NOTES... flatten the dough.. Here in Lancaster, Pa Whoopie Pie are soft, creamy cake like batter with a sugary filling, but of course were known for the Whoopie Pies being there a Amish pastry... I would give you the recipe but it's been handed down for generations, also no marchmellow creme is used in mine that is... it's all from scratch ...

I don't know why I'm responding, but here goes...I'm 62 and grew up in Maine; these were called Whoopie Pies, (and still are), and they were my kids favorite dessert. I have made them for family gatherings, school bake sales and upon request for birthday parties. As for the marshmellow we have used not only white marshmellow, but also raspberry. But the kids favorite was the white. For those of you who remember you may also remember this phase, "wicked good"....lol

I believe there were called moon pies... I'm going to make them today for my kids...YUM

whoopie Pies?

I'm 65 and I don't remember anything like these. What were they called when sold commercially? Were they a regional item?

I am 76 and trust me, these are not from my childhood.
