Campfire Pancakes

The tastes and smells of a crackling campfire can't really be duplicated, but when you make these at home on your own griddle you can get pretty close.

What You'll Need

  • 3 eggs, well beaten
  • 2 cups milk
  • 3 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar

What to Do

  1. In a medium-sized bowl, combine eggs, milk, and oil.
     
  2. In a large bowl, combine remaining ingredients; add egg mixture and mix thoroughly with a wooden spoon until smooth.
     
  3. Pour 1/3 cup of batter onto a well-greased, hot skillet or griddle for each pancake. When bubbles form and edges begin to brown, flip pancakes and brown other side.

DEFINITELY use a castirnon griddle or frying pan for these - I cook them in butter (as my Grandmother did) - SO good served with homemade maple syrup!
