Mini Apple Pies

Capture the full flavor of Grandma's home with these delicious Mini Apple Pies! This quick and easy recipe will fill the house with the glorious scent of apples and cinnamon for that true home cookin' feeling.

What You'll Need

  • 2 Granny Smith apples, peeled, cored, and cut into small cubes
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 1 tablespoon butter
  • 2 tablespoons chopped pecans
  • 1 (7.5-ounce) package refrigerated biscuits (10 biscuits)

What to Do

  1. Preheat oven to 425 degrees F. In a medium bowl, combine apples, sugar, cinnamon, nutmeg, and lemon juice.
  2. In a large skillet over medium heat, melt butter; add apple mixture and cook 5 minutes, or until apples are soft, stirring occasionally. Remove from heat and stir in pecans.
  3. Place biscuits on a flat surface and press with fingertips to flatten. Equally divide the apple mixture into the center of each biscuit and fold dough over to form a half moon. Using a fork, crimp the edges to seal, then place on a baking sheet.
  4. Bake 8 to 10 minutes, or until golden brown.

I make these with Pillsbury Cresent Dough or Weiner Wrap. They are good but a little icing helps. Mix one half of a Tub Cream Cheese (whipped type) , 1 cup of icing sugar and 1/2 tspn of pure maple extract. Mix. Drizzle or spread on pies or anything else you like. Brick cream cheese can be used but it is not as easy or as quick. I found the weiner wrap easier to work with. I also used a rolling pin to get the thickness and size I want. Makes 3 large pies. These mini pies are sooooo much better when you use puff pastry instead of canned biscuits. I think they're called hand pies here? They're outstanding.

have made these and very good. want to make pies with refrigerated pie crust dough, and using a muffin, how long would I bake them?

Hi there! The Test Kitchen has not made this recipe this way, so we cannot guarantee the outcome. We have a few suggestions if you want to make it that way. First, you can cut the dough into 4 inch rounds and line a greased muffin tin with them. Then, put the pie filling mixture into the tins and bake until golden brown.

My aunt used to make something like these that were pineapple, I have been looking everywhere for that recipe. Does anyone know of something like that?
