"Crispy" and "crunchy" are not typically words you would use to describe pasta, but that all changes now! This change-of-pace fried pasta makes a novel snack or salad topper.

What You'll Need

  • 1 pound spiral or twist pasta
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground red pepper
  • 1 teaspoon salt
  • Vegetable oil for frying

What to Do

  1. In a soup pot, cook the pasta according to the package directions for 4 to 5 minutes, or until tender but not soft; drain, rinse, and drain again, removing as much water as possible.

  2. Meanwhile, in a small bowl, combine the garlic powder, oregano, cumin, ground red pepper, and salt; mix well and set aside.

  3. In a soup pot, heat 1 inch of oil over high heat until hot but not smoking. Carefully add the drained pasta to the hot oil in batches. Cook the pasta for 12 to 15 minutes, or until crisp and golden, stirring occasionally. Drain on a paper towel-lined platter.

  4. After all the pasta has been fried, toss with the seasoning mixture and serve, or store in a re-sealable plastic storage bag until ready to serve.

This is so darned good. We call it fried buttered noodles. You can use any kind of past you happen to have and experiment with different herbs. One we love is dill and basil. So good, yummm!

Why do you call it "buttered noodles" when there isn't any butter in it at all? Just wondered.

This recipe sounds okay, but an even better way to have fried mac in my opinion isbr /Fry 4 - 6 slices of bacon, remove from panbr /Boil drain, and rinse mac (how ever much you want, maybe 1 to 1 1/2 cups elbow)br /Return mac to frying pan, cruble bacon and add to mac.br /Sprinkle to taste with garlic powder, salt pepper.br /Give it all a good stir, cover simmer on low for at least 10min or so to give flavor's time to meld, mac to reheat and fry a bit.br /Walla! Great fried mac. br /I can't take credit for this, it was made up by my Mom one day when she wanted something different to eat. She was an an amazing cook.

It's "Voila!" Just sayin'.
