Orzo Mushroom Bake

When you unmold this easy-to-make go-along, suddenly your side dish will become the main attraction. Mushrooms and pimientos turn delicate orzo pasta into a mouthwatering favorite they’ll ask for again and again!

What You'll Need

  • 1 pound orzo pasta
  • 2 tablespoons butter, melted
  • 1 (4-ounce) can sliced mushrooms or mushroom stems and pieces, drained
  • 1 (2-ounce) jar diced pimientos, drained
  • 2 scallions (green onions), thinly sliced
  • 2 envelopes (from a 2-ounce box) onion soup mix

What to Do

  1. Preheat oven to 350 degrees F. Cook orzo according to package directions; drain. Place in a large bowl, stir in melted butter, then mix in mushrooms, pimientos, scallions, and onion soup mix.
     
  2. Place mixture in a 10-inch Bundt or tube pan, and bake 25 to 30 minutes, or until heated through. Invert onto a serving platter and serve immediately.

This is a hit no matter what you serve it with! Recently, we paired it with our Banquet Brisket for a fun-filled, food-filled  holiday get-together.

Serving Tip

Just before serving, fill the center of the ring with a bunch of curly parsley to add some nice color to your table!

Great receipe, however, I made some substitutions that I feel added to it and kept the salt content down. Added fresh portabella mushrooms with fresh sweet onions, orange & yellow peppers and som shopped garlic. Sauteed iit in 2 tablespoons of extra virgin olive oil, then added it to the orzo, salt and pepper to taste. Topped the bundt pan with panko bread crumbs, dash of melted butter and baked for the receipe time. It gave the dish sme crunch, and it was quite tastey, was a hit on the Christmas buffet, only added abut minutes t prep time but well worth it!!

Looks & sounds good... What about making the orzo with low salt chicken broth and using carmalized diced sweet onions in place of the onion soup mix? You can always add salt if you want

oops, meant with "two" pouches of soup mix.

The recipe sounds very good, but seems it might be a touch salty with the pouches of onion soup mix. Going to give it a try. And to "little miss 0915", your comment made my day. Have to admit it does look like that. :)

Would like to make this healthified!! Could "quinoa" replace the "orzo"? toba1@bellsouth.net
