When you make this, you can tell the family you're bakin' bacon corn bread. They're gonna think you're repeating yourself and that you're makin' Bacon Bacon Corn Bread...but that's okay. One slice and they'll agree that it's doubly good!

What You'll Need

  • 1 cup sour cream
  • 1 cup milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 1/2 cups yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1/4 cup real bacon bits
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

What to Do

  1. Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.
  2. In a large bowl, whisk sour cream, milk, egg and butter. Add the remaining ingredients and whisk until mixed. Pour batter into prepared dish.
  3. Bake 25 to 30 minutes, or until a wooden toothpick inserted in center comes out clean. Let cool 15 minutes, then cut into squares and serve warm.

Fruity Watermelon Pops

It just doesn't get more refreshing than watermelon pops in the summer! Plus, watermelon is a great fruit to help keep you hydrated when the sun is blazing overhead. We like to add a little bit of something extra to our Fruity Watermelon Pops by mixing in chopped berries or fresh mint! Yum!
