What You'll Need

  • 1 (14-1/2-ounce) can cream-style corn
  • 2 cups self-rising cornmeal
  • 1 cup heavy cream
  • 1/3 cup sugar
  • 1/4 cup (1/2 stick) butter, melted

What to Do

  1. Preheat oven to 350 degrees F.  Coat an 8-inch square baking dish with cooking spray.
     
  2. In a medium bowl, combine all ingredients; stir until well blended, then pour mixture into baking dish.
     
  3. Bake 55 to 60 minutes, or until firm in center.

I use undiluted evaporated milk , ( not sweetened condensed ) as a sub for heavy cream in recipes like this. Works pretty well.

Is there any way to make this using a lighter ingredient than heavy cream? or will it be too runny?

I notice the recipe calls for self-rising corn meal. Is this the same as enriched, degermanted corn meal? If not, is there a way to substitute this type of corn meal for this recipe?

1 cup self-rising cornmeal= 3/4 cup plus 3 tablespoons cornmeal plus 1 Tbsp. baking powder plus 1/2 tsp. salt
