If your lunch box or afternoon snack could use a little change-of-pace, then you're going to go crazy for these...Crazy Corn Dog Muffins! What's crazy about them? Well, aside from being "crazy good" they're also super easy to make and very portable!

What You'll Need

  • 1 (8-1/2-ounce) package corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 2 tablespoons melted butter
  • 2 hot dogs, each cut into 3 even pieces
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 2 teaspoons mustard

What to Do

  1. Preheat oven to 400 degrees F. Coat a 6-cup muffin tin with cooking spray.
  2. In a medium bowl, combine muffin mix, egg, milk, and butter; mix just until moistened. (The batter will be lumpy.)
  3. Spoon batter evenly into muffin cups. Insert hot dog piece into center of each muffin cup.
  4. Bake 10 to 12 minutes, or until toothpick inserted in center comes out dry. Remove from oven and allow to cool 5 minutes, then run a knife around edges to loosen.
  5. In a small bowl, mix mayonnaise, honey, and mustard. Refrigerate until ready to serve with muffins.

What a clever and fun recipe this is and I love that's it's portable and will probably freeze well. Personally, because I prefer even bites of everything, especially in stuff like muffins...I'm thinking if you were to chop or slice the hotdogs and actually incorporate them into the muffin mix it would be an even distribution of the ingredients and all would be good in the world. You can also make some chili dog sauce and serve it over the muffins with your favorite chili dog toppings and that would be super yummy!

This recipe is like a mini and corn dog. I like all the simple ingredients, and I think this will make a great appetizer. I think the sauce sounds strange, but I will give it a try. I can see dipping these in ketchup and mustard, more like a corn dog at a carnival.

As crazy as this recipe sounds, it was great! I made them for my partner, and she really liked them. The only tweak I did involved baking time I left them in the oven a couple of minutes longer than the directions called for so the tops would brown. The sauce is really good, and I plan to use it the next time I make baked chicken (chickensaucebreadcrumbs) Another thought is "poppers"...Using the same recipe exactly as is, only using a "mini" muffin pan, and substituting cocktail sausages for the hot dogs.
