Easy Banana Muffins

We love banana bread, but sometimes carrying a whole loaf of it around can be kind of inconvenient. So, we decided to come up with a banana bread muffin recipe that you enjoy while on the go! Our Easy Banana Muffins will perk you up whether you eat 'em for breakfast or dessert!
What You'll Need
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 2 eggs
- 3 ripe bananas
- 1 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
What to Do
- Preheat oven to 350 degrees F. Coat a 12-cup muffin tin with cooking spray.
- In a large bowl, beat butter and sugar until creamy. Add eggs and beat until light and fluffy. Stir in bananas; mix well. Add flour and baking soda, mixing just enough to moisten.
- Spoon batter into muffin cups and bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean.

These banana muffins turn out really soft, fluffy and delicious! We sprinkle a few walnuts on top for family members that like banana nut muffins or leave them plain. They are great either way! Really simple recipe to make!

I thought they were kinda bland. No salt listed in the either. I also added pecans. Not something I will make again. Disappointed.

These are very easy to make and sooooooo tasty! Sure appreciate all the delicious recipes on "Mr. Foods" site, and enjoy everyones input on how they re-do recipes, etc. Its nice to have that exchange of information, as we can give each other new ideas perhaps we haven't thought off. One suggestion I can make is one that I use often on different recipes with muffins, quick breads, and the such; (Sprinkle a little brown sugar or grandulated sugar on top before baking). Gives it a little 'sweet crunch.' I've had many people and of course hubby and grandchildren that really enjoy bake goods that way. I think your recipe is the simplest and easiest Banana muffin recipe that I have seen so far. My Banana muffin recipe is similar to yours except that I add baking powder and salt. If anyone else freezes their bananas when they get ripe, 3 ripe bananas = approx. 1 cup mashed bananas.

I ADDED PECANS AND ALSO 1/2 tsp. CINNAMON AND THEY TURNED OUT GREAT! I USED PAPER CUPCAKE LINERS IN THE CUPCAKE PANS, AND CLEAN UP WAS EASY! I AGREE, THAT YOU NEED TO MASH THE BANANAS BEFORE ADDING TO THE BATTER. :-)

I just made these. They are delicious! I did add craisins and nuts. Oh, and I only used a1/2 cup sugar instead of a whole and they still taste delicious.

I just made this today, it makes 16 muffins, and i also added pecans that i put through the ninja. I know the recipe does not say this but you need to smash up the bananas before you try to stir them in lol.

Wow! This recipe was soooo easy and fast to make. I made them for breakfast and the only thing I did add, was some banana extract that I had. Will make this again for sure! Thanks!
