Quick Soda Pop Cake

This irresistible lemon cake recipe gets its tangy lift from, of all things, lemon soda! With an added garnish of lemon drop candies, this 3-ingredient Quick Soda Pop Cake will add sunshine to any occasion!
What You'll Need
- 1 (18.25-ounce) package lemon cake mix
- 1 egg
- 1 cup lemon-lime soda
- Confectioners' sugar for topping
What to Do

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

In a large bowl, combine all the ingredients except confectioners' sugar; mix well then pour into prepared baking dish.

Bake 30 to 35 minutes, or until a wooden toothpick inserted in center comes out clean.
- Let cool completely. When ready to serve, sprinkle with confectioners' sugar.

You can actually make this cake without the egg..got the recipe from Weight Watchers. White cake mix with diet soda. That's really all you need. The cake doesn't rise much, but it's low in calories and still tastes delicious.

Your new site is lovely, but I cannot figure how to get my recipes into my individual folders. I have collected many and while the alphabetical aspect is great, I don't remember the names of some recipes and have to go to my individual folders. Help.

Hello. Are you having difficulty moving recipes from the main recipe box into folders? Looking at a recipe in the recipe box, there is a grey box under the description. Click "Add to Folder" in the upper left hand corner of the grey box. A window will pop up with your folder names and you can add the recipe to one. To view all you folders, click on the "My Folders" tab at the top of the page (next to "My List"). Hope this helps!

Great question! We have found that the difference of a few ounces does not impact the outcome of the recipe. You can go ahead and use the cake mix that is 15.3 ounces. Thank you for your question!

I thought I read to add 5 Tbl. of flour to the smaller size box cake mix. That should make up the difference in sizes.

We uses different cake mixes and different soda pop's, we also use one egg. Got it from Tupperware years ago, we "bake" ours in the microwave for 6-8 mins comes out fantastic.

gm I thought this sounded "Good and Easy", which is what I like so I made it tonight. It is okay, but I prefer my cakes very moist so I boiled 1/2 cup sugar and 1/2 cup water with about 2 teaspoons of lemon juice for about 2 minutes, poked holes in the cake with a long-tined kitchen fork while still hot and drizzled the glaze over very slowly so it would soak in. Then I covered it tightly and allowed it to cool. That made it much better.

I MADE ONE YEARS AGO WITH SAME CONCEPT. CHOCOLATE CAKE MIX, CHOCOLATE YOOHOO, 1 TSP MINT EXTRACT, THE EGG, AND 1 CUP CHOCOLATE CHIPS . WAS GOOD TOO.

I made this cake many years ago when Mr. Food was on TV. I made the lemon/lime one and it was the most fabulous cake I had in a very long time. Guess it was as I still remember it and will make it again. Enjoy everyone!

I have made the sodapop cake for several years, and love them. However I never add eggs, just the 18 oz cake mix, any flavor, and 12 oz of sodapop. Mix and match what ever you desire. I love spice cake with Dr.Pepper. Use white or yellow cake mix and pour in cherry soda or strawberry or orange. There is no end to what you can do. Chocolate with cherry Pepsi or cherry Dr Pepper is out of this world delicious

i have used a chocolate fudge cake mix and cherry coke or wild cherry pepsi, 12oz can mix 1/2 c powdered sugar with rest of soda(4oz) mix well pour over warm cake

I usually add the juice and zest of one lemon to any citrus cake I bake, just to up the zing factor. Has never failed me yet!

I have made the spice cake with pumpkin - it was really good, but the flavor of the cake really doesn't matter since you will not be able to taste the pumpkin - it just adds moistness.

sounds yummy. (I thought cake was unhealthy, now it really is with the carbonation added!) but for a once in a while treat, can't resist the lemon! thanks kay for other ideas, especially the pumpkin brownies . That would be good maybe with spice cake???

Weight Watchers has been using this recipe for years - without the egg. You can use ANY flavor of dry cake mix + 1 can of soda (any flavor, reg or diet). Mix together and bake according to cake mix directions. 2 of my favorites - 1 box choc cake mix + 1 can cherry soda - or - 1 box yellow cake mix + 1 can cream soda And if you want more of a brownie texture - in place of the soda - use 1 - 15oz can of pure pumpkin (not pumpkin pie mix - this mix will be very thick, but no water is needed. Bake @400 for 20 min).
