Chicken with Zucchini and Tomatoes

Switch up dinner tonight by bringing everyone at the table a little taste of summer! Our Chicken with Zucchini and Tomatoes will shed sunshine on your table no matter what time of year it is! With crunchy zucchini, refreshing tomatoes, and tasty chicken all wrapped into one, who could ask for more? 

What You'll Need:
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breast halves
  • 2 small zucchini, cut into 1/4 inch slices
  • 1 (14-1/2 ounce) can stewed tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
What To Do:
  1. In a large skillet, heat oil over medium-high heat. Add chicken and cook until browned on both sides, about 8 to 10 minutes. Drain off excess fat. Add remaining ingredients.
     
  2. Reduce heat to low, cover, and cook 10 to 12 minutes, or until chicken is no longer pink in center, stirring occasionally.

I have a similar recipe that calls for the chicken to be cut into bite-sized pieces and a list of seasonings instead of Italian seasoning, but I usually use Italian seasoning for convenience. When we are up to ears in tomatoes from the garden, I blanch, peel and chop fresh tomatoes instead of using stewed. This is much better with fresh tomatoes. I use 4-10 tomatoes depending on the kind and size. I serve this with pasta.
