Bring back memories of yesteryear with our recipe for Skillet Chicken and Potatoes. Thanks to some shortcut ingredients, you can experience great-tasting comfort in just 10 minutes! This is an easy chicken recipe that the whole family will love because it's a delicious dish right out of grandma's cookbook. 

What You'll Need

  • 2 cups cubed cooked chicken
  • 2 cups frozen mixed vegetables, thawed and drained
  • 1 (10 ounce) can condensed cream of chicken soup
  • 3/4 cup milk
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 3 cups hot mashed potatoes (see Tip)

What to Do

  1. In a large skillet, combine all ingredients except potatoes over medium heat; mix well. Cook 10 minutes or until heated through, stirring occasionally.
     
  2. Remove from heat and top with hot mashed potatoes. Serve immediately.

I made this with the mushroom soup as I didn't have chicken soup. I did put cheddar cheese on top and broiled it. It was very delicious.

This is similar to Shepherd's Pie. I top with shredded cheese and french fried onions, then return to oven for 5-10 mins.

I made this last night. It was so easy and economical. My family likes it and all I did was add some garlic bread to make this a complete meal. I didn't change a thing and will make this many time more.

Basically my recipe for my "Comfort Chicken" except everything is fresh and I use my broth (gravy) from the chicken that I have baked and made from the drippings. This is, however, a great meal for those in a hurry or on the go.

I think I would rather have the potatoes on the bottom.

After putting potatoes on top I would put in oven to brown like double baked potatoes.Let you know how it turns out..

I have substituted ground beef for the chicken in this recipe and cream of mushroom soup for the cream of chicken soup - is delicious!

Creative - but then what do you call it? Recipes are just a starting point to go from, and you did it well.
